no, faggal sugar. so when I do make marinades, I make them myself, using worcestershire sauce, olive oil, lemon juice (very little) and soya sauce <- wenner vir 'n steak

nothing beats a it of Coke in teh marinade, the acids break down the fibers in the muscle making the Steak super tender.

the other day we did not have coke in teh house, so we soaked the steak in a bit of balsamic vinegar for about 45 min. (get the process started)
then rinsed it off propperly. and then put it in a spiced gold, worcestershire, soya and olive oil marinade. let that sit for another 45 min.

the lemon juice does the same thing, but honestly the acids in coke (regular not coke zero) works the best.

no not at all.
what I am saying, is with the right process you can make a bad steak turn into a steak that good.
now imagine what that process can do for a steak of the quality you braaied for me?

you agree, the quality of meat, as well as the correct method for braai makes it worth it right? in the same way a good marinade, can enhance a braai.

here's my opinion on marinades...

marinades are like curry. The completely change the texture and taste of whatever it is you are using it on.

Marinades are for fillet. Because fillet tastes like schit and is dry as my surname.
Curry is for offal. Because offal tastes and smell like schit, and you have to hide the taste with something like curry.

Offal is impossible to eat without curry, just as fillet is impossible to eat without marinade.
 
So my point is... if you have a silly steak that's always tough (porterhouse) or taste like cardboard (fillet), you probably received it for free (because who would go out of their way to buy something and then go and change the taste and texture of the meat)... then marinade that bitch.
 
Steak in Coke ? Faaak.... you should try and age your steak.... let it mature....

and yes a fillet needs a FLAVOURED marinade. just like chicken.

but a practical marinade can make a steak more enjoyable, but then you need to approach it from a chemistry side, not from a cooking side. if that makes sense at all.

chicken doesn't need marinade... bier hoender -> use a thermometer and take it off the second it is finished!!! juiciest piece of meat ever!

There is also the breast in pan method using only salt and pepper <- I'll try and make this next week on the braai... Because next week is...... PAN WEEK :D I'll light a fire and make whatever I make in the pan... expect chicken, steak, mince and the likes.
 
Oh, just asked the wife what's up for dinner tonight... seems we have some more hamburger patties.... damn, i did say I won't make the same thing in the same way twice.... so any ideas what to do with the patties tonight?
 
Alll y'all mothertruckers need to get some culture...

Fillet can be gorgeous without a marinade, its called Châteaubriand. Granted it needs a sauce to bring some moisture back to the dish, but even a nice parsley butter can suffice.

but that's my point with fillet... it's the most tender, but god damn... about as tasty as my plakkies

when I do make fillet, I stuff the schit out of it, but even then I prefer to make my bacon and mince roll instead.

I was thinking along the lines of a "salisbury steak" but that's really just a patty without a bun... I think I'll do this: Braai the patties, make a kark lekker mushroom sauce, and serve it on a bed of caramelized onions

ok.

re mince, the patties then you have more options.
basically you can turn it into Kebad,

or you can make meat loaf

(save these options for mince night)
