In general, why are some motherboards so much more expensive? If I take the board in my link and compare it to MSI boards over R1000 more expensive, then I don't see that much of a difference in spec between sub R1500 boards and boards costing over R2500.

That i7 cpu will perform exactly the same on your MB as it would on one costing R3k more. The more expensive MBs have more features, ports & slots usually. They will also have more beefed up power delivery circuitry for those people that want to overclock their K series cpus. You pay extra for all these things which in most cases are not required by the user.
