Looking at the i7 Raptor Lake 13700/DDR5 based, 2 x M.2's slots.
thinking this gives a good base that can be worked with for a long time...

Something like this. PSU, chassis etc maybe a different motherboard up to you but this is a good baseline:

so I assume you a AMD guy... hehehe nothing wrong... like camera's you get Nikon guys and then Canon guys,
Games you get AMD and you get Intel, do remember, AMD was always said better for gaming, assuming thats still hold true ?

I'm a what's the best guy, I currently have Intel and Nvidia but these AMD CPUs with 3D V-Cache are absolutely next level.

5800x
FRactal design Celsius s36 360mm AIO cooler
Asrock b550 steel legend
32GB ddr3 3600mhz overclocked to 3733 and tighter timings
Hikvision NVME 256GB OS drive
few 2.5" SSD for games
Mushkin vortex 2tb pcie 4.0 for more games
2TB HDD WD Black for storage.
Palit gamerock rtx 3080 ti
Corsair rm750x
Phantek G500a
Asus rog pg279q 165hz 1440p ips
Sennehieser hd58x headset
Corsair k70 TKL keyboard
Razer viper ultimate mouse


So what would you guys think is a worthwhile upgrade I can do to my rig?
 
So my current system is a bit held back by the CPU I feel.
i7 7700k
3070Ti
ROG STRIX Z270G
3200Mhz 32GB DDR4 RAM

Unfortunately I decided to go with the Phanteks Evolv MATX for this build a few years ago so my motherboard upgrade options are limited to MATX or ITX boards.

What could be a good CPU + Mobo upgrade for 120/144Hz 1080p gaming at high or the highest settings?

It's better refresh rate even if you only running of intel graphics still better buy as it can do 170hz with Dispalyport

Bought 4 of them for 2 people in the office and they love the higher refresh rate. I'm super impressed with the motion clarity and the colours looks very good.

Whats the difference between a 3070 and a 3070Ti...
aka what does the 'Ti" bring to the party, see in most of the options there is both models.

If it's for this gaming pc, neither, you want 1440P IPS and minimum 144Hz. The Acer one above, the Samsung G5 and the Dell version with similar specs if you can find stock are what you should be looking at. Probably 1440P IPS and 165Hz is what you would get.

The Ti is more than likely just a better bin 3070, essentially an overclocked 3070, so maybe about 5 to 10FPS more, that's about it

You don't need an upgrade.
If you really want to, you could upgrade your GPU if you're at 1440p or 4K, but honestly your PC is just fine as is.
 
... whats the views of the current MB onboard sound... it's not really the days anymore where the first thing we did was look for the best creative sound card... ;)

What do you guys think about the G9 Samsung monitor?
I know it's not the same, had a G7 and died after 2 year warranty was over.
Bought a Dell 32 inch 4K and works nicely with a 4080.
You planning to use it just for gaming or work as well?

Unless you have really fancy headphones, something that's 250ohm, you can just use onboard.
