Thoughts on leaving it until the veil breaks?
Recently inoculated and growing for the first time so still gathering as much info as I can

The black on the caps are actually spores. If you're growing from a syringe your mushrooms are going to fruit at different times so best to harvest them individually as soon as they're ready. Through observation eventually you will be able to time it just before the veil breaks. Good luck on your grow.

They can last a few months in the fridge, I'm not sure about freezing them.

Spore syringes are not for consumption... but cultivation
. A spore syringe contains millions of microscopic spores which serve, to put it simply, almost as the “seeds” of mushrooms. There is no set yield that you will get from a 10ml syringe... It largely depends on genetics. Technically you can yield an infinite amount because after your first flush you will be able to take the spores from your own mushrooms and continue cultivating.

Depending on how you grow I would say the most you use is on something like BRF cakes which is around 1cc per injection hole. You can use a little drop but I find that contamination can sometimes grow quicker before the mycelium fully colonizes. If you grow on agar first you literally need a few drops.

Spore syringes have no psilocybin in them - no magic. That is the reason they are legal to possess - you can drink the liquid inside, shoot it into your veins if you want (eek!) and it won't do anything to you.
In order for you to get any magic from a spore syringe, you have to use that spore syringe to grow mushrooms. But your yield from that is theoretically unlimited. You can use that 10ml syringe to start 10 BRF cakes, then split those BRF cakes into 20 grain jars, then use those grain jars to start 10 monotubs (2 grain jars per monotub), for an absolute bucket load of shrooms.
But, that does depend on cultivation skill - something I for one am lacking!

That is correct, it keeps the spores in the cap and not on the shrooms like in the pic. Still edible though.
