I tend to make my own pizza these days, from scratch. I would say that wafer thin is waste of time and the dough I end up making is too light to be that thin(also, difficult to handle).

Maximum thickness I would go is still under 10mm, preferably approx. 10mm is ideal for a heavy pizza(topping weight) with the dough I make.
