That's the first time I heard of this stereotype. What honest, hardline white racist would let a black person make his/her sandwiches? Call me paranoid but I wouldn't trust them. Of course that's if I was a white racist.
Jokes are supposed to be funny by definition, - that comment was not funny, it was just a man's way of diminishing her success by ignoring her achievement and focusing on her gender and race, reinforcing negative social stereotypes. If she was white he would not even have commented but he has to pull the race card wherever he can.
