I try to include as much veggies as I can into our daily diet, but I get bored with the choices available.

Need new ideas, please :)

My go-to veggies are steamed/sauteed spinach, potatoes in all its forms, steamed cauliflower and brocolli, green beans cooked in a tomato sauce, sweet or savoury carrots and roasted or cooked pumpkin.

corn and gem squash is a favourite for me

How about making a tomato sauce and dropping in mushrooms and spinach - its awesome and you could even top with cheese and bake it?

If you ok with fried foods, you can use chilli bite mix to make a batter and dip slices of aubergine(brinjal) in and fry them .

Slice baby marrows and onions and toss them in olve oil, salt and black pepper.
 
Spice it up with some good delicious fruit. How about pizza? Mexicana is good. Hawaian too. Try some spicy chicken also.

lol most veggies i eat is with a nice steak or nice seafood

now im hungry
 
Maybe think less about having veggies as a side dish and cook the occasional veggie main dish? A nice veg curry or soup, for example.

We are desperately limited in this country unfortunately. I recently spent some time in Seattle and my eyes nearly fell out at their farmers market - not to mention the average 'whole foods' stores across the country. In most decent supermarkets, a bruised or odd looking piece of fruit or veg is almost unheard of. People often don't even check the stuff before grabbing.
 
1. roast veg: butternut/pumpkin, aubergine, baby marrow, carrot, peppers, sweet potato, onion and herbs tossed in a bit of olive oil
2. alternative mashes e.g. basil & sweet potato
3. bean curry with chickpeas, peeled chopped tomato, onion & spinach
4. fresh peas. darn i love them.
5. sprouts. don't be a hater.
6. tabbouleh derivatives - parsley & mint with bulgur, diced tomato, cucumber and garlic if you like
7. cucumber & tomato chopped chunky and drizzled in home-made mayo (with a bit of mustard & dill)
8. stuffed peppers, with quinoa/couscous/pasta rice, nuts, mushrooms and something sweet like raisins/apricots if you like.
 
Agreed. Can they not grow other varieties of mushrooms, tomatoes etc?

I did some work for EL Tomato packers some time back. They do grow all sorts of varieties... that get exported. The market prices just don't make it feasable to sell the good stuff locally.

We grow some awesome mushrooms in the wild in SA - mostly in non-indigenous forests (pine). My fav are the Boletus (cep) and Pine Rings. Always best to go with people who know their stuff the first few times. That said, those two in particular are near impossible to mistake. They are very distinct.

The shaggy ink caps mentioned on there are interesting too, though since my wife went into labour the day after eating those for the first time, she's not that keen :D
