Vegetables ....

The shaggy ink caps mentioned on there are interesting too, though since my wife went into labour the day after eating those for the first time, she's not that keen :D

Grilled mushrooms. Grill 'em upside down, lightly seasoned with salt and pepper, and "stuffed" with cheese. Super tasty snack. The portabello (sp?) are more tasty than the white-button. Oh, and it's actually better not to use those super-large sized portabella 'shrooms. The smaller ones are easier to eat - just pop it whole in your mouth.

Hubbard squash. Stuffed with mince.

Roasted veg. The seasoning from Royco (I think it's Royco) is awesome. They have those sachet seasoning for veg bake, chicken a la king, potato bake, etc.
With the veg bake you can chop up and add just about any veg. The recipe on the sachet recommends using milk, but if you're lactose intolerant, either use EasyGest milk, or use water. It's fine with water.
With the potato bake, you can mix potato and sweet potato (and turnip, but personally, I don't really like the taste of turnip, so it's up to you).

Baby marrow. I grow my own, so mine usually weigh about 1.5kg ~ 2.5kg. Cook (boil) in water with a wee bit of salt, and serve with a teaspoon of margarine/butter. Or make it in a bredie. Oh, this is a very creamy veg, one of my favourites.

Patty Pan. Same as the baby marrow, except the ones in the shops are way too small to make a decent bredie with, but they taste very similar to baby marrow.

We grow some awesome mushrooms in the wild in SA - mostly in non-indigenous forests (pine). My fav are the Boletus (cep) and Pine Rings. Always best to go with people who know their stuff the first few times. That said, those two in particular are near impossible to mistake. They are very distinct.

The local Termitomyces we get in KZN are very nice! I'm just to scared to go picking mushrooms.
 
Ive got an awesome veggie quiche type meal that doesnt need a crust and it really takes a few minutes to prepare...its a huge winner in our house and even the kids dont gag when they eating veggies! Shout if you want the recipe. :)

Here it is....I just adjust it to what ever veg I have available, bacon is optional..BUT, the only thing that hasn't worked well is cabbage hehe. Try that at your own peril. I suggest follow the recipe for the first time so you get the hang of it and then go mad with what ever you have available at the time. Bar the cabbage, I've yet to have a flop and I ain't no Nigella. :D

Don't get put off by the longish ingredients list, it's very easy.

Bacon & Vegetable Quiche

2 Tbsp butter/marg/oil
1 packet bacon (250g) rindless, chopped
1 large onion
1 cup spinach, torn/shredded
1 cup baby marrows, chopped
1 cup carrots, grated
1/2 cup flour
5 eggs
1 tsp baking powder
1 cup cheese, grated
3/4 tsp salt
1 tsp sugar
1 Tbsp lemon juice
1 cup milk
Dash of cayenne pepper (optional)


Heat up oil in large pot to very high heat.
Add chopped bacon and onion, fry until browned.
Add spinach, marrows and carrots, stir fry for 2 minutes only to develop flavour.
Remove pot from heat!
Add flour and mix in well.
Add all remaining ingrediants and mix well.

Pour into large glass dish (bear in mind that it will rise slightly due to baking powder) and bake in oven preheated to 190deg C for +/- 35 minutes (or until browned on top)

I better add that this recipe does not belong to me, found it on the mommy blogs ages ago but just incase, I know how sour those moms can be when you pass off their stuff..if I had the link I would add it but can't remember now. :D

MMMM! We know those as iKhowe, they are stunning mushes but unfrotunately one of those that - if you don't know your stuff - you can mistake for some of the less desireables. You only have to make an Amanita Phalloides mistake once (I believe they taste stunning but aren't good for keeping you alive).
Despite being an old 'shroom hunter, I avoid iKhowe since they are white gilled and a bit too easy to mistake for my liking.

Nee man! Peas are awesome lol! Have you tried them fresh (not bag/frozen/tinned)? Shell them yourself. By the time you're finished, you'd have invested so much of your own time, you will love them for life :p
 
Yes, they are called iKhowe by the locals, did not wan't to refer to it as that seeing it's the common word for mushroom in Zulu.
Yeah, I won't go picking them (or the ones I think are them) as I don't want to get it wrong. Had a ex that lived on a farm and we had them a lot for breakfast as the farm workers picked them.

They are delicious though simply fried in a bit of butter with salt & pepper, as good a steak I reckon ;)

My father used to buy all his vegies in bulk, I spent hours in the kitchen shelling them and preparing the Beetroot, slashing pumpkins all of that. I just couldn't eat peas or beans, since I was young.
 
I made sweet potato the other day and mashed it with honey and margarine (light) - flippen awesome!
Try every now and then raw veggies
Make coleslaw.
Carrots (thinly sliced) fried in olive oil and brown sugar.
Curried green beans
pumpkin cakes

Use Robertsons "Veggies" spice in some dishes
