So we decided to be vegetarians 3 times a week.

But I need help. Last night we had roasted veggie pasta. ... Tonight I think we will have veggie quiche and salad.

So please post nice veggie recipes :)

I do this (mostly for religious reasons) ... but I would suggest you rather stick to veg on different days of the week rather than consecutive days because thats going make you'll bored eventually. Another option is to have a balanced meal rather than just having veg only.

We eat at his mothers house on wednessday. And he wants to Braai on Friday's and that always leave food over for saturday. So my options were limited :o

Stuffed peppers, using various combinations of brown rice, mushrooms, onions, corn, etc etc

Risotto, which takes some time, but lends itself to all sorts of ideas. A great way to use the last white wine or even sherry!

Butternut & sweet-potato soup with rye or brown toast, or fresh crusty bread

Chickpea or butter bean curry
 
Straight up roasted veg.

Chunks of potato, sweet potato, butternut, carrot, peppers and whatever else you like. Season with whatever (rosemary is a great choice) and chuck in a whole clove or two of garlic, dont peel them - they will become paste inside the shells if you leave them in long enough.

All of this into a casserole dish or baking tray, splash of olive oil and into the oven at around 180 for approx an hour.

Trust me because I am one: even the most hardened meat eater will be seduced by the amazing savoury bliss that this produces.

Us indians have been doing this all along. our household fasts (don't eat meat) Mondays and Tuesdays. You could say that we where more religious in the past back then we used to only eat meat on Wednesdays and weekends.

Edit: checkup on the Frys Soya range their hotdogs are quite nice

Credit to you guys, Mila. "If everyone ate vegetarian 50% of the time it would be like 50% of people were vegetarian".

Will post some nice recipes in the next day or two when I'm at home and I have some time.
 
The worst thing about cooking a veggie is getting the wheelchair in the pot.

Ok, busy making BCO's From the Can to the Pan Chili Bean:

Ingredients:
1 can green beans
1 can butter beans
1 can baked beans
1 can chick peas
1 can tomato and onion mix
1 red pepper
1 green pepper
1 yellow pepper
1 box Fry's vegetarian mince (or like 500g regular mince for the necrophagists out there)
1 tbsp crushed garlic
1 tsp origanum
1 tsp paprika
1/2 - 1 tsp cayenne pepper (depends how zazzy you want this dish)
2 tbsp oil

Directions
Rinse the butter beans and chick peas in a colander.
In a large pot heat (medium heat) the oil and the chopped peppers and garlic.
Cook for about 5 minutes and then add the cayenne pepper, origanum and paprika.
Add the Fry's mince and mix the provided gravy powder to be added later. Stir occasionally while cooking for about 4 minutes.
Drain the green beans and add them to the pot.
Add the tomato and onion mix and then Fry's gravy. Cook while stirring occasionally for about 5 minutes.
Add the rinsed butter beans and chick peas and the baked beans.
Stir everything up nicely cover the pot.
Reduce the heat to very low and allow to simmer for about 1/2 hour, stirring every few minutes.
Serve.

He is porky so he had a choice Diabetes or me. :mad: He chose me so veggies he will eat 3 times a week. But I need to keep it interesting or he will cheat :(
