Veggie Thread

The worst thing about cooking a veggie is getting the wheelchair in the pot.

Ok, busy making BCO's From the Can to the Pan Chili Bean:

Ingredients:
1 can green beans
1 can butter beans
1 can baked beans
1 can chick peas
1 can tomato and onion mix
1 red pepper
1 green pepper
1 yellow pepper
1 box Fry's vegetarian mince (or like 500g regular mince for the necrophagists out there)
1 tbsp crushed garlic
1 tsp origanum
1 tsp paprika
1/2 - 1 tsp cayenne pepper (depends how zazzy you want this dish)
2 tbsp oil

Directions
Rinse the butter beans and chick peas in a colander.
In a large pot heat (medium heat) the oil and the chopped peppers and garlic.
Cook for about 5 minutes and then add the cayenne pepper, origanum and paprika.
Add the Fry's mince and mix the provided gravy powder to be added later. Stir occasionally while cooking for about 4 minutes.
Drain the green beans and add them to the pot.
Add the tomato and onion mix and then Fry's gravy. Cook while stirring occasionally for about 5 minutes.
Add the rinsed butter beans and chick peas and the baked beans.
Stir everything up nicely cover the pot.
Reduce the heat to very low and allow to simmer for about 1/2 hour, stirring every few minutes.
Serve.

Mila, how about easing the dude into it? Veggies only one day a week and cut the meat portion of other meals in half. Cold (no) turkey three times a week is a little harsh.
 
It's easy for a vegetarian to say that.

To a vegetarian not eating meat is like a gay dude not sleeping with women.

To a guy who enjoys meat going without is a very big deal.

I used to, but BF was raised with "vleis rys en aartapples" It took some talking to him to get him to agree to this "D

1x tin borlotti beans (butter beans tend to break apart and don't reheat so well)
1x tin chickpeas
1x tin lentils
1x tin chopped tomato
1x onion
2x large potatoes cut into small cubes
bunch of spinach
curry powder and salt to flavour

parboil potatoes and cut into small cubes
cut onions chunky and and fry with some curry powder and canola oil
add tomato and legumes - don't drain, but keep some of the brine to hydrate the mix while cooking
cut spinach and add toward the end

serve with crusty bread and butter.

Most vegetarians used to eat meat. The transition to a non meat diet's nowhere near as difficult as you might think.
 
this is specially for anony-mousse who has problems with gas :)

Barley, spinach, mushroom, butternut & parmesan risotto

similar to the woolies meal:

cube butternut & either parcook in the micro; or cut the cubes into slivers and roast them with olive oil in the oven
slowly boil barley in a water / veggie stock mix.
don't add too much water to begin with - cover the barley and keep adding liquid as it gets absorbed
add about half a cup of white wine between additions of stock mix when it starts to plump up
stir in mushrooms when the barley is cooked and keep adding liquid according to taste
put butternut and sliced spinach in towards the end
add diced fried bacon if you want a bit of meat
stir in a good chunk of parmesan/grana padano if you can handle the dairy and fat content

3 days a week is a good balance for me. I love meat I do not think I will ever be Like BCO a full veggie( I Love Steak Sorry BCO :o). But it is way better on my pocket this way. I grow all my own veggies and salads :D
