Depends, the dealer will not fit your parts because they can't guarantee quality, understandably so because you will crap on them if your brake bads break in half while driving.When getting something replaced or serviced, is it cheaper to buy let's say the brake pads and have them fit it or have the centre supply them as well?

That makes sense, guess ill be using their supplied brake pads.Normally the service includes discounted labour rates and a warranty on work done.
You would probably pay a higher labour rate and loose the service centre's warranty on repairs or work done.
The service centre also makes a mark up on parts supplied.
Dont service centres stamp for brake pads also?Let them do the engine service so you get the service (franchise dealer) stamp and go do the brake part replacement at a reputable private workshop.

I would feel a bit scummy to ask beforehand what brands they use and then to double check afterwards if the pads have been changed at all

They would need to carry out the entire list of scheduled maintenance for them to stamp it, not only a few. Brake pads are non-scheduled maintenance as they are specifically wear related items.

Yes, e.g. if your car is due for a 90k km service there is a list of items associated with that service, e.g plugs, air filter, oil filter, oil... etc, you then get a stamp confirming that service was done.
