Weber Braaing

The downside of the weber is cleaning the damned thing.
That's because your process is flawed. You cook indirect without a drip tray. If you cook indirect, you have to use a drip tray, otherwise all the fat will drip and spatter in the Weber. If you cook direct, the fat is burned on the coals, which provides flavour and also makes cleaning easier.
 
Wood burns hotter than coals, and can damage a Weber. My Weber does not see wood.
 
My problem is my balcony is right next to my neighbour, thats the kak thing about living in a complex.
Now i just need to find an affordable extractor and I will never have to worry about smoke again.

Ive got it down to a T with smoke from charcoal and most times my neighbour doesnt even know i am braaing until he smells the food later. I want to add wood as well sometimes but I have found this creates invisible smoke that you dont see until you look at the balcony ceiling and see it is going black. Normally this wouldnt bother me but the body corporate head mistress here is 175 years old and she is a vegan and does not allow braais on balconys, even though she has never said anything to me. Yet

Invite the old bat up for some weber cooked veggies, buy the roasting veg packs from p&p just add a few garlic cloves,olive oil and season with black pepper and pink salt, pop it in a roasting dish and cover with tinfoil. Those borrie patats wrapped in tinfoil are also lekker.

i dont make a bonfire of wood, just an ambient one for atmosphere
However i do throw in 3 or 4 pieces of fire-starter-wood i think its called to get some extra heat as per the directions of my KettleCADDY and this then redlines my temp gauge to 450 degrees. The temp inside is way hotter.
I then throw my pizza in and 90 seconds later it comes out, perfect pizza

Ive only done this 3 times and the weber still looks great, but i cant imagine lots of abuse to the enamel can be good for it.

I used to use a drip tray, but I'm just to lazy, these days I just cook and clean when it gets to grotty, I even use wood to burn the grill now and then.

Haven't managed to damage mine yet burning wood in it. It's the best only way to get good heat for pizza so it's worth any perceived risk in my books.

saw it donkeys years ago
you dump them in a tin of paraffin and take it out when you need a firestarter
next day you throw it back in the paraffin until you need it again

i get about 10 braais out of a packet of blitz currently, maybe more, but a 5litre paraffin is only 100 bux last time i bought from a Usave in Villiersdorp a year ago

You buy them. Those rocks you chuck into paraffin.

my papsaks dont burn very well and it makes a busload of smoke, looks like i am toy toying on the balcony burning tyres, very frowned upon

You're looking for pumice stone. That ankle-sanding stuff they sell at the street lights.

Right now I'm sitting with some leftover alcohols I want to see if I can turn into fire lighters. Perhaps keep some wood or charcoal on hand to soak in the alcohol. Or something. It's still a work in progress :D
 
Yes, i have tried multiple times googling it over the last few months but failed everytime
