I can never get my egg yolk to stay in the centre. Not even with normal boiled eggs.

Any tips?

Sausage covers a multitude of sins ;) I also struggled with that but if you roll the sausage out nicely and wrap it up it comes out looking pretty good anyway.
 

i made scotch eggs on saturday morning for brekkie with some mash

was so good

but damn was difficult getting the egg wrapped, i think mince was too soft and i didnt pound it 1st

i tried a 4 and half min egg which for me is normally perfect with runny yolk but when i tried peeling it it just broke ..lost 2 eggs like that and i used a ice water bowl to cool them down

the other 3 i did the eggs a little longer and got the wife to help wrap them...came out so damn good though

i never had issues with the crumbs or the ball breaking when i fried it

Last minute broccoli-base pizza - baked in the oven. So quick and easy to make.

Recipe please? For the base.
For one pizza (kinda small):

*** 1 head of broccoli (and I added about ¼ of a head of cauliflower).
*** seasoning
*** 1 egg
*** 1 tsp baking powder
*** about 2 Tbsp - ½ cup oat/almond/wheat/spelt/whatever flour (I used oat for this)

  • No microwave so I boil / steam the veg till soft then give a quick pulse in a food processor and strain through a muslin type cloth (it's a bag for making almond milk) until most of the water is removed - as much as possible. A microwave is probably easier as you don't introduce so much water.
  • Add to that the egg, seasoning and flour just to bind it together a bit, enough flour to get it into a reasonably cohesive ball of 'dough'.
  • Stand for 10 minutes (seems to give the oat flour a chance to sticky up a bit)
  • Flatten onto a lightly oiled sheet of baking paper. I just plonk the ball down and flatten it with my hands to about ½ to ¾ cm. You'll see when it starts to break up if you go too thin then just back off a bit.
  • Bake for about 20 mins at 230, and like last night the base was quite wet so flipped over and did another 20 mins @ 230 until browned and crispy edges. First time I did this I only baked for the first 20 mins - especially in a fan assisted oven it goes quite quick. If using a pizza oven do the pre-bake in the oven then take out, top, and transfer to pizza oven.
  • Remove from oven, top with delicious toppings and bake for another 15 mins. Watery tomato sauces can make the base soggy so I prefer to just use tomato puree.
Other than cooking the veg there's hardly much else involved. By the time it's in the oven the bowls and utensils are cleaned already :).

Beef and pork rissoles with grilled potato apple salad and couscous. Delicious but the red wine vinegar was a bit vrot and I didn't realize so the potato salad was a wash :(

I'm a staunch holdout of 'alternative base pizza's' legitimacy to be called pizza. Pizza has 3 fundamental ingredients: A dough base, a tomato layer and a cheese layer. If you remove one of the legs of the stool and replace it with fracking leeks (LEEKS!!!!) you have created another kind of food altogether. Looks tasty tho :p
