No cut, you really want stewing meat because it'll take over an hour to break down. Just be sure to cut off the tendons and fat hanging on the meat. Lamb stewing meat tends to be stringy and bony so you usually get about half the weight of the meat into the pot once it's been trimmed.

Lamb neck is quite a soft fillet cut I think, so I guess it's fine but don't let the meat go too long. Maybe fry it separately and add it into the stew towards the end.

The biryani's already a shclep so would prefer not to do that. Will give neck a miss then and look for something that says "stewing".
