Do you have a special studio light going on or something?
Nah - close to a window with a Samsung S8 and a quick levels adjust.

Recipe for the chickpeas?
It's the cooking them from scratch that makes it - so much nicer than out of a can. It's always different, this was:

Into the instantpot:
chickpeas, chilies, onion, tomato, random curry spice, homemade hot sauce, salt.

Served with cheese that was lightly stirred through and put under the grill for a few minutes. Heavy drizzle of coconut oil, olive oil, mango hot-sauce, soft egg and some microgreens.

Please post recipe for the calamari. It looks flippen awesome.

@JSparrow

Calamari rings (or I cut from tubes if I have).
Breadcrumbs using slightly stale (few days old) bread made in food processor (or buy breadcrumbs).
Mix spices into breadcrumbs (fish spice, chili powder, salt, black pepper - or lemon pepper instead of fish spice) according to taste - any other spices you like with calamari or fish.
I let the calamari marinate in buttermilk for an hour or two before I cook (I believe it makes it tender, use it for meat as well at times).
Cake flour.
Eggs.

To cook...
Rinse calamari and let drip dry in a colander.
Heat up oil in a large saucepan (Not deep oil, just enough to almost cover a calamari ring lying flat).
Cover rings in flour.
Dip in egg (make sure it is properly dipped, some of the flour will wash off, not a problem).
Cover in breadcrumb mix.
Fry a few at a time till golden brown, take out and rest on paper towel to absorb most of the oil.
Do not fry for too long.

I often make a mayo and chili dip, or else lemon butter to go with.

I find flat baking trays with large surface area work best for the flour and crumbs.
