Hey what was that roast chicken recipe you posted a while back? I'm going to make a roast tonight. Not sure if I'll have time for the prep now though but I want to take another look at it, it was pretty epic.

This is the recipe I use, with some tweaks. I use salt, garlic powder and paprika on the skin. I don't stuff the skin with herbs or garlic. And I don't make the bread.

I use 230C. Breast up, 28 mins, flip for 12 mins, breast up for another 5. Don't use a big bird, around 1.2-1.4kg.

Having one tonight.

Mm I don't have time to brine the chicken for that long but otherwise it looks manageable. Last time I did a roast I actually did stuff the skin with herbs and butter and it was incredible. I'll add a rub on top and maybe some roast veg to go with.

Should be fine, just make sure you dry the skin really, really well. Will help if you dry it off, salt it and stick it in the fridge for a couple of hours.
