I don't understand this thing people have with brussel sprouts. Been eating them the whole week - roasted, added to curries, boiled along with other veg - nothing unpleasant about it imo.

Smell is much worse than the taste.

Brussel sprouts are awful when they're boiled which is how most people have known them. There are ways to make them very nice.

Sounds nice tho. Any dipping / soy sauce? I've been meaning to try tempura with some spiralized veggies.

Chicken stuffed with mozzarella basil and roasted peppers baked in breadcrumbs, and arancini with mozzarella (basically arborio rice in breadcrumbs fried).
 
Nandos. It was busy AF, sit down, take away, pickup and drive through orders.

have you tried chicken like this with a mint nut chutney ..tastes very good

Recipe okay.... let me think.

For the chicken:
- Take 4 chicken breasts and slice them open through the center. Layer with basil leaves, slices of mozzarella cheese, and roasted red pepper (slice up a couple of red peppers and roast with olive oil and balsamic vinegar for about 15 minutes). drizzle with olive oil and pepper, seasoning and origanum. Secure the breasts with toothpicks.
- Beat a couple eggs in a bowl, and another bowl with a mix of breadcrumbs and parmesan. Dip the breasts firstly in the eggs, then thoroughly in breadcrumbs. Layer on a baking dish with a spray of cooking oil on the bottom to stop from sticking. Bake for about 40-45 minutes on 190c.

For the arincini:
- Take 300g of arborio rice and boil in 2 cups of water on a low heat. Add more water if needed but don't let it get soggy. Boil for about 15 minutes till sticky. Drain and let sit for 5 minutes to cool.
- Mix in 1 egg and a tbsp butter. Add chopped parsley, thyme and chives... or other herbs. Season well.
- Take a naartjie sized amount in your hand and press into a ball. Press hard... it will start to come apart but it's okay, the breading and frying will make it hold. Press a hole in the center with your thumb and add in some diced mozzarella, then cover with the rice.
-Take 1 bowl with an egg (you can also use the leftover from the chicken and add another egg), 1 bowl with flour and 1 bowl with breadcrumbs. Firstly roll the ball into the egg, then the flour, then the breadcrumbs. Then drop it into hot oil about 1 inch deep.
- Continue with all the rice. You should get about 10 balls in total.

That's it, not too complicated.
 
Light dinner tonight.

Fresh broccoli, cheese and apple salad topped with crispy bacon bits.

Cheese grillers for some added protein.
