Decided to keep things simple. Beer bread and butter.

This bread consists of beer, sugar, salt and flour. Everything needed for a nutritious meal :twisted:

The texture seems a bit tight.

I'm following this recipe from Reddit, with a few modifications - especially since he's making15kg at a time..

Clean and cut oxtail and toss in a couple pinches of black pepper. Sear on cut sides that have cartilage. Chop celery, onions, and shallots. Spread on the bottom of a large pan with whole pieces of garlic. Lay oxtail on top seared side up. Combine wine, soy sauce, chicken stock, and brown sugar in a pot. Bring to a boil and pour over oxtail. Cover with plastic wrap and foil and put in conventional oven @275 for 6 hours. The next day, peel fat off top and separate oxtail from liquid and place oxtail in separate pans. Pour liquid and vegetables in a pot and heat until gel turns liquid. Strain out vegetables and return to heat, reducing in half. Cool dish in refrigerator.


My deviations (apart from quantity): I dry brined the oxtail overnight, and compensated by using less soy sauce. I didn't add any pepper pre-sear since I think it causes a bit too much burning. I added the juice of a whole orange. I cooked for 4.5 hours, not 6. I checked it on the hour to make sure it was tender but I didn't want it completely falling off the bone. And I skimmed a lot of fat off immediately post-cook.

I don't think I'll be straining out the veg to make a demiglace, I reckon I'll just have it as a stew. When I'm warming it up I'll add mushrooms.

Randhir you inspired me to Try Oxtail. One of my fav meals but I have never made it before. A friend gave me her recipe so going to try that and hope like hell I don't ruin R300 worth of oxtail. It bloody expensive

That's like 4kg. How many are you cooking for?

To be honest it seems you can adapt any short rib recipe for oxtail.

Parmesan crusted? Is it a strong taste? Find Parmesan to be quite strong at times.
No not strong at all. I used half a cup of parmesan with half a cup of breadcrumbs and a ton of herbs, so the parmesan is balanced out.
 
Where do you buy such cheap Oxtail? Mine is around 2,7kgs from Woolies, since its a first time cook I wanted to get a good quality oxtail. I figured Woolies would be decent. Cooking for 4 x 2 meals maybe 3 depending on how much is leftover. Decided to leave it for the weekend cause I want to take my time and not rush. You never shared your end result, or did I miss it?

Thanks :) They're a bit of a schlep to make so I tend to do them in bulk and freeze the ones I'm not going to use on the day after I've browned them.

Browning them in a pan used to be the most time consuming aspect of making them but I've switched to deep frying them for a couple of minutes.

Was on special for around R70/kg. I took pics but unless you make a real effort stew normally just looks like brown goop in a bowl :p

It was fantastic, but a tad too rich.
