Shame leave the poor man alone, if he wants his greens looking like an impotent man in his 50's needing Viagra, it's entirely his choice, some people prefer floppy veggies. I would have just fried it in a pan for a minute or two with some butter and added it to the dish before serving. That is generally what you do with leafy greens. like this.

Seeing you're the cheese guy ... i've been thinking. If you have the time (I think you do) please give some ideas
on a meaty cheese platter. Like what cheese to pair with what meat, sauce etc. Thinking of doing this for the 24th.

Korean cheese fondue/BBQ, add all the side dishes like kimchi pancakes, hotpot.......job done
