Boerewors scotch eggs (So SA eggs, maybe?) with grape and feta salad, and...something with red onion. Haven't figured out what yet...

EDIT: it will be a hazelnut and onion basmati rice...

PnP whole BBQ chicken in a bag. It's a bit dry but I have a tomato sauce and chutney dip.

Lieutenant Morgan dark blended rum.

That's it.

Gonna be bacon, eggs, fried tomato, mushrooms and LC bread with cheese ....... and some Sprite Zero.

Changed my mind and made boerewors scotched eggs with a lemon, black pepper, and hazelnut risotto. Well, cooked risotto style. Was out of this world good, if I may say so myself...

Looks amazing.

Egg boiled first (middle still runny)? Then take of shell, wrap mince around it and give it a quick fry?

Must try this.

Eggs cooked to soft boiled. Peel. Flatten meat mix very thin between cling-film. Wrap evenly, and carefully to avoid breaking the egg. Place in freezer (the colder they are, the less likely you are to overcook the egg). Just before they freeze, remove them, in to flour, egg-milk wash, then breadcrumbs. Back in freezer. Heat oil. Fry them till golden. Done...

BTW apoc and anyone else wanting to ,make the Scotch eggs. I use 95g to 100g of meat per large egg. Gives me the best ratio of meat to egg and wraps around the egg perfectly...
