Exchange not appropriation. Most of what you mistakenly believe was appropriation was immigrants bringing their cuisines to the US and making it unique.

Thai, Italian, Indian, French, and Mexican. I like Korean BBQ. Chinese and Japanese are good too, but can be overrated. The problem with French is that some can't crack the technique, and I am also VERY selective with what to like. When some say French, most think classic cuisine, but they do have modern cuisine.

Fusion is another thing... I am seeing more and more crossovers between Italian, French, and Asian cuisines.

Greek isn't bad, but I don't like the style in which it is served, but that is also the case with Mexican.
