What software would you guys suggest I use to create my own wiki. The software should also enable me to restrict access so that only certain users can view certain information in the wiki.
 
Depends what kind of setting you want the Wiki to be in, but also check out Redmine for a full (open-source) project management solution.
 
I recently was looking for a lightweight PHP based wiki solution, but for the most part I felt that various packages availble have way too much bloat in them (for instance MediaWiki is great, but I find 44mb excessive). What I ended up playing around with was WikkaWiki which suited me quite well, it is simple, easy to install and use, and not insanely large. Im pretty sure the access control it has should suit your needs.

Then again, as sn3rd said you have to take a look at what there is thats available and find what best suits your own needs.
 
WikkiaWiki looks pretty good as well. I see that MediaWiki is also popular.

Thanks for the info guys. I'll look into mediawiki and Tikiwiki. They want me to setup a wiki for my department. Do any of you know if it is possible to have links to pdf or word documents on a wiki because I don't think that it's possible.
