What do you want it to do? File server, firewall, mail, etc?
I'm also not quite sure what you mean by Windows home server on a Ubuntu laptop, you will have to elaborate slightly.

Why do you want to put Windows Home Server on the laptop if it already has Ubuntu on it? You know you can easily create network shares on Ubuntu without the need for anything else.
If you really want to install Windows on it, do you want to keep your existing files in Ubuntu or do you want to remove it completely and only have Windows on the laptop?

Yes, you can do this without Windows. It will be much less hassle too.

You can Google "Ubuntu file server" also to get a ton of examples and tutorials.

Yes. Ubuntu will auto mount the drive when you plug it in.

I'm considering turning my Windows Home Server 2011 into an Ubuntu server running Plex server.
If only I didn't throw all my drives into a single dynamic disk. Curses.
