Dude, every issue point you raise indicates to me you don't even have an intermediate understand of Windows (in general not just Win8).
What tweaks, I'm talking about spending 30min customizing stock Win8 up front to be 99% Desktop centric (i.e. like Win7 with a big Start menu). All you need to do is uninstall the all Metro apps (simple right click for each), replace them with your desktop programs (pin to Start) and finally fix any default extension handling.
None of these concepts are new to Win8, pinning (shortcuts) and default extension handling were there in Win7. If you don't understand them in Win8 its highly unlikely you understand them properly in Win7.

In all honesty though DJ windows 8 really isn't much different. If you pin all your stuff to your taskbar the tile system is rendered useless.

...pin programs to your taskbar ... programs ... control panel pinned ... taskbar, obviously control panel ... Boot up ... desktop and ... stuff is pinned.
program ... browser ... download ... install ... via cd/dvd ... pin it to your taskbar. Windows 8 is identical to windows 7 ... pin your programs.

DJ is pointing out that what may seem like child's play to me and you does not seem like that to people who may not have good knowledge of windows. My sister for instance is a CA and i bought her a windows 8 touch screen. Now dude she is one of the most intelligent people i know. She studied and partied for 12 years and earns crazy money but even she sent me a bbm asking for help but i knew she would need help because at first windows 8 seems like a whole different operating system.
Most people don't know much about windows, some of the most intelligent people for instance would have no idea how to uninstall and reload a sound card driver because they only do what they need to on their computers. when it breaks they pay someone to fix it. why do you think pc techs have jobs?
So DJ does have a point, many people are simply too busy to google everything and in the computer world when people who only use their computers for what they need a change in OS is a massive thing. Windows 8 isn't that bad but i can only imagine the chaos caused by vista, training courses must have been needed for vista because that was so vastly different yet to me and you it wasn't that bad.
I would like you to go and do what my sister does everyday, i can imagine you would have a blank look on your face.

Windows 8 for average joe that just wan't to use his computer is not that simple. Yes there are ways to make it behave like win7 but that's beyond most people.
Dude windows 7 for the average joe isn't that easy. It's all about pinning to your taskbar, once you have everything you need on your taskbar, you click desktop on boot up and boom windows 7. The tile system was never really going to work on pc because pinning items is just so much easier. Other than that even the most noob user should be able to click on the icon on his taskbar and work on the program they need to without much fuss.

Also I run win8 without touch and I love the modern UI. I hardly ever use desktop anymore, got plex,hulu,netflix apps, games etc all on my UI and looking good.

For me Windows 8 is atrocious! I either have to remember keyboard shortcuts (which I don't and have to google each time for them) or place my mouse in a very specific part of the top of the screen to sometimes have the right side thingy open up to allow me to select search, type in a program and hope that it comes up. Note, it does come up religiously while browsing the web though because it confuses multi-gesture swipes continuously. But don't try use a three-finger swipe to see it - oh no! Then it has an issue 7 times out of 10.
Or I have to wade through hundreds of tiles to find the right app, most of which tell me that they won't open on my non-HD connected screen, that's if I can find it while the thing scrolls left and right at the speed of light. Oh, and my password for the computer is my password for a hotmail account I had years ago. WHY?! I want a separate password, but wading through for an hour looking for that option means that if you go ahead, you're practically creating a new account on the computer. Why the fsck would I want that?! And why must I now go and change the hotmail password and therefore lose all browser password settings in order to change my fscking Windows password? And why does it always lose the connection to my wireless networked devices if I switch wireless off for a second and switch it back on? Why does it tell me that the name is already in use? Fsck you, it isn't!
Now we have to deal with the constant "you have more apps that can open a specific file" issue. Lets get stuck in the Metro interface again trying get out of the crap reader program, instead of using Acrobat, the same goes for pics or any other attachment that gets download.
My WHOLE issue with 8 is it wants to do EVERYTHING on its own or open everything with its built in software, ala metro interface being the whole screen, its fancy & nice at first but it just gets to much after a while.
Why is Security Essentials/Defender not on my status bar, now I need to pin it to easily access it.
Why do I also have to sign in to MS to download apps like skype? They seem to be alienating 3rd party developers that's why the like of Valve & Minecraft devs aren't that happy with 8.
This has now actually turned into a rant & that is not where I wanted to end up while writing this, I will give 8 credit its a beautiful touch OS & I m certain surface will be nice, but out of a perspective or viewpoint of a "normal" computer user it just doesn't work like it should, unless of course you load 3rd party apps, hack the registry tweak stuff here etc, but that's not how it was released, was it?
The BIG PICTURE is that as a stock OS without your tweaks(consumers not developers), fixes & hidden links for "normal" apps the OS doesn't work. I believe in a working or not working philosoph,y if i need to put band aid on something to work then its not working, because your only plugging holes & not fixing the real issue.

Associations will either revert to desktop programs or you'll be presented with a dialog asking you to associate.I think a lot of what you are saying is more file association problems, yes windows 8 does try and make you use their built in crap but the thing is if you just go to you file association options on day 1 you can sort it out in a few minutes.
