Nice going.

My Gauteng install is done charging at 09H45, 10H30 if doing hot water too.
My Kabookie install is finished charging at 08H30.

Make that chimney a free-flow, 2 bricks high max.
 
Battery took an 18% dip during loadshedding, it's been charging for 4 hours now and still sitting at 98% even after the reset (on the hubble)

Will see what it does on the next loadshedding and charge cycle.

Cycles.. how do you see how many you've done? If it's even possible on this setup

The standard inverter+battery combo wont allow you to see the cycles normally. You'd need an additional component like Solar Assistant or RIOT for the Hubble batteries to see this info from the BMS

Guessing the Sunsynk wifi dongle won’t do the trick as well
 
I don't have solar assistant. The standard Solarman HA integration is more than sufficient for my use case.
Which HA Integration are you using ?
The Deye I have is a 12kW version (3 phase) - and it seems to be struggling to pick up the parameters (I believe it might be because the serial number requires a different vesion of the HA integration plugin ( 2711xxxx)
Using / tried using with not the best available documentation

So I've been noticing the Sunsynk app isn't showing all the data. It doesn't want to show the draw from the house or from the grid, only panels and battery. I'm using that integration, but I have the single phase 8kW. I simply put everything on the one incoming municipal feed and the other two are now dormant. The per phase limitation (and increased price) of the 3 phase didn't appeal to me.

Probably an issue with the App.
Open a browser (hopefully on a real PC), go to Sunsynk.net and login using your creds. Does it show the same?
 
Any online solar panel stores that you guy’s highly suggest?

I have a recently installed 8kVA Deye inverter with 2x Pylontech UP5000 batteries for a total of 10kWh storage as a load shedding solution. No solar panels yet because it is a rental property.

The wife and daughter have already managed to trip the inverter a few times. The Deye then shows error F56 which is DC busbar voltage too low.

What causes this fault and how can I rectify the problem? Switching the inverter off and back on resets everything back to normal but I am curious how to avoid the tripping.

UP5000s are 0.5C batteries, so two in parallel will only allow a discharge rate of around 4800W. Restrict your loads to under that when running on battery, or get another one for 3 in parallel.
And kick the backside of the salesperson that sold it to you without telling you of this limitation.

I was watching the display panel when they were turning various appliances on, the load never exceeded 4 kVA.

I am aware of the 0.5C limitation and will probably add a 3rd battery in time.
