Android 2.2 (Froyo) and beyond...

i haven't rooted my phone so i dont know what the story is regarding putting a newer release of android on but how does that work?

You have to find a ROM for your phone (I would ask here in mybroadband what ROMs people have used for your phone model - Leaf have fiddled with SA releases in the past to make it difficult to put a custom Rom on, so what works in other countries may not work here)
