Android "upgrade" removes features? What am I missing?

I actually just went to a cell shop and asked if i can look at a Go edition , yip you can only toggle do not disturb on or off , thats really kak. That was an A03 core 32gig and 3gig . its actually a nice budget phone
go edition isnt for everyone, same as getting a Huawei without GMS,
some can live with it, and some cant,

if you really cant afford a phone, look at used,

at the moment i think anything is better for me than my Note 11 Pro user (incompatibility issues) , even a 1.5k phone .

check Used, thats the best option for a better phone on the cheap.
sure my S9 screen is cracked, but for most of what I need it works, and Since its rooted and running a custom OS
get updates at least 2 times a month.

nah , not needed , i get a new phone every three months more or less if I want , we have 6 contracts with MTN , my A73 is on order for Dec.at the moment ive gone back to my LG Velvet , a brilliant phone , the Note 11 will be donated to a sponsored child .but yes i agree a decent second hand phone is sometimes a lot better than GO

So what you're saying is that my Galaxy S3 mini from 2012 is a proper hpone but the A03 from 2021 isn't?

Uh-huh.
Yes. That is correct.

Just like buying a flagship premium brand car from 2012 will be better than buying the bottom-of-the-range cheapest budget car in 2021.
