Don't mean to hijack the thread but do you guys know where I can get double 00 flour? I see there is a couple of places online but I'd prefer to get them from places maybe one of you have purchased from.

There is an SA brand called Millstone that make 00 flour. I have some but have not used it yet.


Their bread flour is very nice.

There is a deli in Pinelands where I buy it... The Ethical Grocer. It is round the corner from the Pinelands Ou Meul (10 meters away) but they do not appear to have a website.
Is it around the corner towards Spar or inside the little passageway with all the other little shops?

The fiancé got me a kenwood chef xl for Christmas so plan to start baking a lot more.
 
I really want to make bagels. I must put in a bit more effort.

I have an extra bowl for ice-cream, you freeze it before mixing. A bit of a pain but the ice-cream turns out really well. And an attachment for making pasta, which I use more often. You can get all sorts of attachments (at some cost) but the machine is unchanged from some 1950's extremely powerful engine, is worth investing.

Yeah the kenwood chefs are an absolute beast.

Follow the above recipe. Every batch I have made has turned out perfectly and they have really been super easy to make.

DO NOT USE AP FLOUR/CAKE FLOUR

You must use flour that has lots of gluten.

I aim for 1min to 80 seconds a side boiled as well.

As I make beer I actually had dry malt so instead of using the sugar I was able to add 40g malt powder for the more authentic bagel as well.

Yep we bought the ice cream attachment and the mincer, want to make proper spicy chicken nuggets. Hopefully can collect tomorrow.
 
How long have you had your sour dough starter going for ? I had a sample from motherdough and had it going for about a year before I lost it.
It's in a dormant state at the moment, haven't made sourdough in ages but it's likely about 4 years old.

You can freeze or dehydrate and pop it into a bottle.

Then just add some to flour and water and restart the process.
