Braai meat marinade

Do you mix yours?

I'm quite conservative when it comes to sauces and don't usually mix. Except I once mixes spur bbq and Lappies -was to sie for.

Spices on the other hand I go mad and mix like it's going out of fashion.

lappies chilli is good

steers tikka as well is good

if you want a spicey mix go with S&P, chilli spice and jimmys

comes out good

you can also just mix tomato, bbq and maybe some other sauce to get a marinade

Make your own. Mix up stuff you already have ... red wine, tomato sauce, coke, spices you like, olive oil, butter. Soak for some hours. Experiment.

Never salt beforehand. Leave salt to taste after braaing.

+1 for a good dry rub. Can't fathom how people can assault their food with that Jimmy's crap.
Yep. I usually dont like the wet marinades. Burns too easily.
My current favourite is the Ina Paarmans Cajun Spice. I use it on everything that goes in the Weber.

Any marinade that contains acid, alcohol, or salt should not be used for very long, because it will chemically "cook" or denature the food in it. Marinate food in these marinades for less than 4 hours.
Marinades that contain citrus juices, especially lemon or lime juice, should be used for only 2 hours or less. Be careful when using acidic marinades. Foods left too long in these blends can change color and texture. Fish fillets, for example, can change in a matter of minutes.
