Cast-iron pans

Interesting tip. I will try that next time. I used oil to season the pan initially, then once it had cooled off a bit I added the butter.


Heat control is tricky on my snappy chef. I will probably take a while to learn, but it’s ok. I have time, and this pan is going to last me a while :cool:

Why is it tricky? Set it and forget it? Record to memory and do the same next time?

Maybe you aren’t waiting long enough for the heat to settle?

You're probably right. I just need to get the feel of it. Which of the four lower-temperature settings is right is the main question, and how long to wait before putting oil, and then how long to wait so that the oil is hot but not smoking.

A lifetime of bad cooking habits are hard to undo.

Rule of thumb for me…being a nerd with a timer on my watch.

Pan on heat > wait 1 minute > add oil to pan wait 3 minutes.

Start cooking.

FWIW that is the standard way to measure a skillet.

I have the 30cm Megamaster and it's a bit too big for our electric stove. I was hoping this one might be better.

I might give it a try anyway. The sides seem to slope a bit more than mine.

Landed by whom? Because you can be sure Yuppie Chef isn't paying retail.

I'm not sure why anyone would pay 3x more for a cast iron pan just because it has the Victoria name on it.

I mean sure Yuppiechef will get a better deal I’m just pointing it it their price is about as good as you getting it from Amazon so profit margin probably isn’t that big.

Likely the good deals we see are all locally made.

I certainly wouldn’t pay that much for a normal cast iron either. Enamelled, sure but that’s a whole different story.

I will pay the money for their tortilla press though, everything else seems rather ****.

Now this I can relate to as there is close to a 100% chance one of their presses will be found in my suitcase come July.
