Cast-iron pans

I have one of these, going on about a year now, maybe longer, maybe less. But it gets used at least 3 times a week. It's my favourite at this point, along with three cast iron pots I 'inherited' from my mother a few years back. Not so sure I'm really helping the seasoning of my cookware as that is still a bit of a mystery to me.

So far I'm really pleased with it - I wish they also had some smaller sizes - I'd like a set :)

What stove do you have? The carbon steel ones seem better with gas or induction due to the lower heat capacity.
On the other hand cast iron smooths out the on/off cycling that induction, and to a lesser extent electric stoves in general, are famous for.
 
Shouldn't matter as long as they are carbon steel. I know De Buyer is a decent one but their handle is technically not oven-safe although people have used them in the oven and just cook off the coating. Their more expensive range is oven-safe but then you are looking at ridiculous money.

For that reason I went cast iron as I'd like to use my skillet anywhere.

EDIT: I see this one is carbon steel but non-stick coated, which kind of defeats the purpose.


This is more what I had in mind when I said carbon steel.


They are oven safe up to certain temps.

But the Pro range is entirely oven safe and the price difference is so small doesn’t make sense not to buy them.

Been waiting for their Omelette pan forever and a day now.

Okay. Didn't really see them locally (admittedly didn't look very hard). I'm just taking the Victoria regular cast iron skillet which is about 21 USD vs the signature skillet which is 215 USD.

From what I've read, there's some odd coating on the handle but once that's cooked off only the carbon steel handle remains anyway so yeah. Much of a muchness.

Yeah it just becomes very gummy if run too hot.

But the site you linked carries the Mineral B Pro series as well.

Not expensive at all really. Might as well get the pro then, as you say.

For now I'll save some money for a lekker big cutting board and then a chef's knife before I get another pan/skillet.

Very happy with my Butcher’s Block.

Only regret is they brought out an even bigger one which I want now.
 
Funny enough I don't cook eggs in cast iron. We've got a low sided non-stick pancake pan for that.

There are people who think the rough surface aids in retaining/developing the patina, which so far seems to be coming along nicely.
Non-stick for eggs is the one pan I buy cheap - quick & easy to use for a quick egg and replace when needed although they last ages if only used for eggs.

(Thinking of getting a carbon wok or pan but still window shopping...)

I see they have a large but that seems to be without the juice grooves (unless they are at the bottom) but it's not possible to see here.


And then they have the grand daddy which is massive at 700mm long.

It's weird yeah mine is the Large but with the groove on one side like the Grand Daddy has but like you say they don't show or say it so it seems different now.


That metal plate on the Grand Daddy seems silly as it means you can't flip it around and use the back without the groove which I do most of the time day to day.

That being said the groove doesn't really do all that much as you would think and either it overflows anyway or it never gets there to start with.

This must be a pricing error because this in a Large would have been an ideal day to day.


I've heard they do quite a bit of custom work so I'm pretty sure if you reached out and asked they could make you exactly what you wanted.

I could never use anything less than the Large ever again.
 
Aaah I figured it out, this is the one I have.


It's anything but "slim" so I have no idea why it's named that as it's the same thickness as the rest and at that it is double-triple the thickness or most everything else that is considered a normal cutting board.

Really don't think you'll notice a difference between 32mm and 50mm in thickness and if anything depending on your counter height it may even become uncomfortable.

Now that you mention it. Just picked up this small non-stick carbon steel frying pan for r30.

Stainless steel skillet. I use Scanpan.

Yea was thinking stainless as well, lasts forever, can go in the oven and in dishwasher.

I bought a 20cm for smaller stuff like eggs, a bit of a learning experience if all you're ever used to is non-stick though.

Except it still retains the same cooking properties as untreated carbon steel and it's dishwasher safe.

I've always avoided non-stick coatings to exposure to high temps so that's out. Also don't put non-stick pans in the oven so that's out too. But at that price I'd just buy and use for eggs anyway.

Yeah, I've been keeping an eye on them for a while. Their custom things require a MOQ (not sure the amount).

Anyway. Back to discussing cast iron.
