(Chalk and) cheese !

I am surprised no-one has started a cheese thread yet.

What is your favourite and what do you avoid at all costs?

Like:
Cheddar - mature or vintage
Cream cheeses
Feta
Haloumi
Blue
Camembert
Brie

Dislike:
Gouda
 
I absolutely love Extra Mature Cheddar cheese.

We have a tradition at home. Every Saturday morning, we go out and get fresh crispy rolls, and extra mature cheddar, make cheese rolls, and then dunk them in our morning tea. Yummy!

I really enjoy blue cheese. The best I've had so far was at a small roadside stall just outside Knysna...the creamiest blue cheese I have ever tasted.
 
My favourites tend towards moulded Swiss cheeses: Gruyere, Ementhal. Love a good rind, and doing a traditional fondue.

Also a fan of crumbly British whites - Cheshire Stilton w/apricots and suchlike.

Then the deliquescent French cheeses - Boursin, Brie (esp with figs or cranberry).

Gouda is flat bodied but it's finer than Cheddar.

Blue cheeses - Roquefort, St Agur.

Cheeeeeeeeeseeee I love cheese!!!

I don't like cheese. I only eat cheese if its melted. Like on Pizza or a toasted sandwich or over macaroni.
I'll eat cheddar and mozzarella and maybe some of that grated parmerson? cheese they serve at Panarotis.
 
Like:
Gouda
White cheddar, matured cheddar or vintage chedder
Friend haloumi
Blue cheese but only in a blue cheese sauce and then only if its not too strong

Dislike:
Bright yellow or bright orange cheddar - sorry, cheddar is either white or very pale yellow!
Strong and/or bitter cheeses, like Gruyere
Cream cheese
Camembert and Brie
 
I can't think of any cheeses I don't particularly like, but my favourites depend on how I'm eating it.

On a sandwich, nothing comes close to cheddar. Mature with Branston pickle on a soft white freshly cut bread is the ultimate.

With crackers, it's definitely Roquefort first, then..

Camembert


For general nibbles
Any kind of cheddar again, preferably matured/vintage. The crumblier the better.

Gouda
Emmental

What's "Cheshire Stilton"? Afaik stilton can only be manufactured in three counties and Cheshire isn't one of them. :confused:
 
Only cheese I don't like is that one that smells like ammonia, think it's Camembert. Besides that I'm a cheese junky.

We stopped at this place close to the Berg once to have lunch and they had a pasta on the menu that contained a locally produced goats milk Gorgonzola cheese which I was keen to try. So I asked the waiter if I could try a sliver of the cheese and he proceeded to bring me a wedge of cheese the size of a side plate. I had it straight and on the complimentary rolls and it was so nice I ate the whole thing. Being stuffed after that I did not order lunch but gave the guy a tip for the value of a meal & ordered a big piece to go for the weekend. It was the best Gorgonzola I've ever had.

Ricotta (sprinkled with salt and pepper on toasted bruschetta)

Thanks for the tip, will be shopping for some cheese and bread for lunch tomorrow. :D
