Change Mail app dictionary.spell-checker language

Pre-Sierra this was (I'd imagine) covered in System Prefs under Language and Text, which has since become Language and Region (that, btw, is set to UK English, as is my dictionary).

The Mail app reverts to US-magled English.

Go to Settings>General>Keyboard>Keyboards>>Add New Keyboard

Add English (UK) to the existing English and Emoji keyboards. Then delete the English keyboard. Mail will then use UK English as default.
 
@OP - you refer to Sierra (MacOS) but you've posted this in an area better suited to iOS (iPhone and iPad)... which one is it?

Thanks. I didn't realise that the OP was actually posting about MacOS.

If the OP wants to change the spell checker in the Mail app on MacOS/OS X, the process is similar to iOS: System Preferences>Keyboard>Input Sources and click the + button to add British as a keyboard. Use the - button to remove the existing ABC keyboard.

Thanks: assume you mean System Prefs/Keyboard/Input Sources ... have added 'British' to 'ABC'. But crucially discovered Spelling: British English under the Text tab. This seems to have cleared it up. Thank you. :p

Indeed the wrong section: opened both the Mac and iDevice sections and ended up not paying attention. Good thing I wasn't driving as well! :o
