Christmas Pudding Recommendations

My wife makes a mean chocolate trifle. Layers of choc mouse, whipped cream, choc brownies, with crushed choc and pecan nuts in-between the layers and blocks of chocolate on top. Yes it's as evil as it sounds.

Speaking of xmas puddings. Someone posted a recipe somewhere involving tinned mangoes, double cream, double cream yoghurt, and brown sugar. Decided to make that but cannot remember which thread the recipe was in and my search terms are not bringing in anything.

Buy a 500ml or 1l tub of plain Greek Yogurt
Buy an equal portion of double thick cream... If you use 500ml of yogurt, you need to use 500ml of cream. 1l to 1l and so on.
Buy two tins of canned Mango
Buy a packet of treacle sugar

Beat the cream 'till it has the proverbial soft peaks
Fold the yogurt into the cream
Pour the mangos and a little of the juice from the cans into a bowl, preferably glass, 'cos you'll want to see this when it's done
Layer the cream and yogurt mix over the mango
Cover, and I mean cover, with treacle sugar
Into the fridge for an hour or so... The cream and yogurt cause the sugar to caramelise and turn this into three layers of perfection.

Serve

Best... dessert... ever!

My SO is going to make "traditional" xmas pudding this year. I nearly fell off my chair when she asked me for brandy and where can she get some. She already prowled my liquor cupboard and there's only rum, liquors and vodka :p

My favourite is layers of chocolate cake, cherries (with a bit of the cherry syrup on the cake), condensed milk mixed with lemon juice and cream cheese, whipped cream and whispers. :love:
