I'm looking at ways to integrate basic IP voice calls into a legacy/analogue pabx. I'm investigating how we can turn one of our analogue trunks into a IP call and convert back again.

IP Phone ----> IP Device (sitting on analogue trunk) ----> analogue trunk extension into pabx

analogue trunk extension from pabx ---> IP Device (sitting on analogue trunk) ------> IP Phone

We are basically looking to deploy a single IP phone, point it at somekind of IP device which is connected to our legacy pabx allowing us to make basic voices calls to and from the IP phone

Cheapest and simplest for just 1 IP phone would be to use a Yeastar MyPBX SOHO.

Why not just port the Telkom number to Switch Telecom and connect the VoIP phone directly using a VoIP line associated with your old land-line number?
