Just wondering if you guys use a custom white balance and if you do, how do you set it? I watched a video on the net in which the guy suggests to place a white sheet of paper in front of the subject that you are about to shoot and zoom all the way so that you take a pic of only the white sheet of paper. Then when you set your custom white balance, you select that pic as the white balance. Thoughts?

Use it for video. Zoom in all the way on a white sheet of paper with the Panasonic AGDVX100E camera and press the button till it sets the WB.
It works great.

No need to bother if you're shooting RAW - just include a grey card in a shot and sort it in post. ;)

I've never bothered with CWB (only ever used AWB - not Eugene's lot :)), but Bwana's method is a good way to go. Otherwise, you can just take a pic of the grey card and set the WB in the camera for the shoot.

[edit]Bwana is right though, RAW has to be the way to go.[/edit]
