I was told today by a guy at PC Zone that DDR2 800Mhz wouldn't work on a mobo thats made for 533Mhz, however 667Mhz would. Is this correct? I always just assumed that all speeds would work, but that they would only run at the mobo's speed.

My motherboard supports DDR2-800. Can I buy faster/slower RAM or does it have to be DDR2-800?
You can buy faster and slower RAM. If you buy slower RAM (such as DDR2-667), the RAM just trudges along at it's usual speed, while if you buy the faster RAM (say DDR2-1066) it will automatically run at DDR2-800 speed.
