I have a mini home speaker and set my sound bar ( over Bluetooth )as the default speaker all works fine but when I return the following day the mini speaker has reset to playing on its own device setting - any body experienced this issue

Ya, the blue tooth connection doesn't seem very strong / stable. How close are the two components to each other? For me anything more than a few meters made it lose connection.

I have a mini and a Samsung BT sound bar. The sound bar is about 5-6m across the lounge with line of sight to the mini and I don't have any issues.
The sound bar usually goes to sleep and disconnects itself and I have to reconnect by saying "Hey google, connect bluetooth" and its playing from the sound bar again

when I ask to "connect Bluetooth" it says that "it is connected to the Philips sound bar do you want to disconnect" but the sound bar is not playing audio

Sounds like a Soundbar issue

Try a different bluetooth speaker and see if it's the same problem

Tried another speaker and it connects every time - went back to sound bar and had to go to home app to force connection - this does not make sense
Refer to my post, there is something wrong with the sound bar.

Agreed

I tested mine yesterday after a few days of not using it and it worked perfectly. I had my soundbar powered off (rather than standby).

Switched it on. Told goolge to connect and it played as expected.

OP, maybe try telling google to disconnect bluetooth after each use. Then reconnect by telling it to connect each time you want to use it.
It may be extra steps but it may be easier than going into the app every time
