There's a trick that you can use should you for some arb reason not know whether the train is going or coming from town.

Yup - if it's moving away from Table Mountain it is coming from town.

And doesn't Pinelands just have the two tracks? One going to town and the one coming back?
Generally they should just be making use of the one side of the tracks, unless there's been an incident where the other set of lines have to be used.

Pinelands has four tracks; two on the Cape Flats line and two on the Central Line.

Conveniently, it has two island platforms. The western platform serves the two Cape Flats tracks while the eastern platform serves the two Central tracks. Makes life a bit easier.
