Can anyone advise me on what the best way is to take advantage of my NightOwl data and schedule downloads while I'm fast asleep?

Torrents? Most programs that I have used used have some sort of a schedule function. You can specify rates for different times of the day:

Most routers allow you to restrict times that a mac address can access the internet or certain URL's.

Solution I use.
Sonoff iot smart switch, programmed and connected to your router to turn it on at night.

Rest of the day switched off.
