any quick 1-click sorta way of doing it?

FairMount and MpegStreamClip also do the trick.

OR

FairMount and Roxio Toast/Popcorn - you can export to any available format including DV, h264, xvid, etc.

on your touch? hmmm, what do you use to play it. i only have the standard media player on mine. will that work?
 
oh, and what do you use to sync your touch with your mac?
Assuming he's referring to the iPod Touch I'm pretty sure it would be iTunes on the Mac and PC.
 
I just installed and ripped a DVD to DivX with DVD Ripper v3. You can convert to almost any other format including iPod video etc..
