i generally prefer to peel the skin first, otherwise it can go hard.
your auntie will tell you to prepare it like so:
1. slice it like a tomato (1.5cm slices)
2. lay the slices on paper towel
3. sprinkle with salt to "draw out the bitter taste"
4. turn it over again after 10 min and repeat the process.
i've found the salt and paper towel bit to make no difference, so don't waste your time.
i would do one of the following:
1. cut into slices, fry and eat with the rest of your fry up in the morning (not my first choice).
2. cut into smallish cubes and add to peppers, sweet potato, butternut, baby marrow, garlic, red onion, herbs and a drizzle of olive oil, toss and roast in the oven at 180 for 30 - 40 min (turn half-way through)
3. create your own ratatouille using brinjal, tomato, onion etc for use in the mincemeat part of a lasagna dish.
