Very strange accident, I wonder what caused Zhou's car to flip, I can't see from the videos. Loss of downforce perhaps or did Russell's car get underneath his?
Russell's front wing hit on the side and underneath Zhou's car. This, compounded by the fact Zhou's car had started to swing sideways caused the car to flip.
Normally they don't.

...or adrenalin, or the memory of previous drivers who did the same whilst cars were on fire, or maybe it was that scene from Driven or maybe it's just George being a bro.

I saw a post somewhere where a driver posted that George assisted him in their carting days as well after his cart overturned. George seems to just be a genuine nice guy.

Benefit given to George. You make some good points here.

The statement that he knew his competitor would back out? That's a statement you hear from every top end sportsman

Sure, very few current F1 drivers has such a callous disregard for others. He's quite literally banking on the other guy backing out to prevent an accident, on the same track that saw him off into the fence last year. Mick would've gotten a sea of hate had he not backed out. He is really a prized arsehole.

And the next time he lands in the fence this is the statement that will come back to bite him in the butt.

Wheel to wheel contact. Front of one wheel hits the back of another while they're both turning, the back one is going straight upwards

You see nothing wrong with his statement?

Not really. You reckon Hamilton or LeClerc or Sainz will pull over and let Schumacher take points from them when they are fighting for a championship? Every point counts, we saw that again last year, Hamilton saw that when Raikkonen won his WDC.

Every. Single. Point you can get.

and interestingly - this is what seperates good drivers from great drivers

getting close enough to the line and unfortunately sometimes even crossing it in the chase of a win

I reckon very few of the others would go as aggressive as Max, he is a hothead with very little sense of self preservation. I would not be surprised at all if he has another big off like last year. And then the orange army will be going on for months again about how the other guy was in the wrong.
