One should only braai on a braai you have built yourself. The fuel that is burned is a mere means of cooking the meat, the real measure is if you have built it yourself.

Does it change the taste in any way to justify the time, expense and labour?

I personally don't care about scoring a pat on the back with myself or anyone else, I just want braai meat, don't care about putting in more effort to make it maybe 5% better...

But if anything, my "mass produced" built in braai does a better job of generating and storing heat than anything I could build myself in a reasonable time frame.
 
With mates:- The Weber with whatever fuel is available.

Just me and the Mrs or if we are in a hurry:- Gas braai.

No real difference in the taste of the meat, but the gas braai is better at cooking alot of meat in a short time thanks to the constant, even and predictable heat. Cooking the meat perfectly, like not drying the wors out or making the steaks Grey inside is 1000% more important than the tool used to cook the meat.
