When I worked at Spur a customer asked me for his steak to be Bleu, was like ooook. Went to the cook and like guy wants it bleu, it was literally a few seconds on the grill.Blue
Only steak that needs sauce is fillet because the flavour is generally lacking compared to other cuts.Not sure it matters how you have your steak cooked if you're just going to drown it in some sickly sauce.

We ordered a bone-in ribeye... and there were these delightful little rare/raw nuggets around the bone. Enjoyed them so much.
