Medium to medium rare, but DO NOT put fuucking basting sauce on it! Who thinks that kak is nice?

When I worked at Spur a customer asked me for his steak to be Bleu, was like ooook. Went to the cook and like guy wants it bleu, it was literally a few seconds on the grill.

We ordered a bone-in ribeye... and there were these delightful little rare/raw nuggets around the bone. Enjoyed them so much. 😭

Not sure it matters how you have your steak cooked if you're just going to drown it in some sickly sauce.
Only steak that needs sauce is fillet because the flavour is generally lacking compared to other cuts.

I never really enjoyed it until I found a little diner near my home in upstate New York that specializes in Pittsburgh Blue Steak which is extra charred on the outside. Now I'm a full convert and believe it's the only way steak should be done :love:

I would probably be fine if the cut is right :-) and it's charred right.
