  • medium-rare: almost always
  • rare: on occasion e.g. if for some reason only fillet is available
  • medium: also on occasion e.g. you have a rib-eye with tons of marbling (medium rare in this case does not render the fat enough)
  • blue: I'm not a vampire, so no, unless we're talking tartare, carpaccio, sashimi etc
  • everything above medium: I'm not a rapist, so no
 
Medium is the way of the true connoisseur.

I've seen too many people sawing their way through the unrendered fat and cold, intact muscle fibers in a rare steak, and then gagging the thing down because some TV chef told them rare or blue is the way to go. The fat and muscle tissue only softens up at around medium.
