More important is that it is seasoned with salt and pepper only.

It's ok, you can call out Spur here
jirre, at Spur I always order medium, it's like a coin toss whether it arrives over or under cooked so medium is just me playing the safest odds, I don't want medium, but I know I won't get medium anyway

It can even be well done as long as it's juicy.
it won't be ... unless it is swimming in sauce poured over after the fact, which also ruins any decent steak for me

Yes medium rare can be good if you use some excellent quality steak. Not really available in SA.
But here in SA the clowns all chew their medium rare Karan feedlot cheap steaks till their jaws go into spasm.
Its a lack of IQ. They feel like some primitive Neanderthal eating a bloody steak and beg for attention of people(mostly women) looking at you eating that bloody steak.
Medium to medium well is the best way to eat normal steak we all buy.

We generally have much hardier breeds here for the climate, and while we do have some of the more classy breeds, it isn't our major stock that services the supply chain in general.

Even with the more fancier breeds here, the overall quality is still worse than the countries mentioned above. Brazil and aussies don't have the highest quality overall, but they would still put our beef to shame.
 
is that a good steak at well done taste just as good as the same steak done medium.

and have you tried all of those? I've had plenty of Argentina, Brazilian and Spanish steak, the stuff exported to Europe is sure as hell below ZA quality, perhaps one must travel all the way there to find better stuff. Spain I've had the good stuff in its home country: 100% NOT at our level, it's decent

let's not even talk about the complete trash UK tends to serve, Scotland is the only exception and goodness knows where to even find it, what's typically served in London is not that

Brazil definitely not, I have more than enough direct experience. Australia I'd highly doubt as well, similar climate at best and big damn desert at worst.

Why does it matter ?. It is general food theory and a bit of food history. The quality of the beef, is impacted by climate and diet.
Afrikaner the majority stock breed you will find here, is also the majority breed used for cross breeding.

While we have bonsmara, hereford, darkensberg, brahman, angus it isn't nearly as popular as the afrikaner there are one or two others as well, that is excluding milk cows.

it matters because that means your knowledge is frozen in time and can be readily discarded in the year 2026

There have been hundreds of these Beef quality ratings done over the years, never seen SA beef feature there.
Yet all these ratings means nothing as our very own distinguished steak connoisseur knows everything and only his palate counts.

Rubia Gallega... Exit thread.....really you going to moan about spain. lol. It is generally consider the best steak in world, and most prefer it over wagyu, and even consider it better than wagyu.

Sigh, not all wagyu is created equal, we have different classificastion of wagyu raised in SA, while some are fullblood they are ranked according with F1, F2, F3 scales pending on crossing breeding. It is wagyu but it isn't even close to japanese wagyu or kobe.
There is countries outside of japan the produces way better wagyu in general than SA ever could.

Australia wagyu outside of japan is pretty much the gold standard for wagyu.
