The important thing is to invest in decent Tupperware containers + pyrex microwave bowl(s) (i.e. "Casserole"). Then you can do a lot of stuff.

Potatoes are easy to cook in microwave. You just stick them in for a couple of minutes in a pyrex container and then you can eat it (add butter/sour cream).
10 min Potato salad: Peel potatos (500g - that is probably 3 big ones). Put in microwave for 6-8 minutes in covered pyrex bowl (stab with fork to see if it is soft afterwards). Cut on squares and on a big plate. Leave for a couple of minutes. Dump the potato squares in the tupperware container. Chuck in mayonnaise and mix. Optionally add mustard and/or chutney and/or gerkins/peppadews. Eat a portion and stick the tupperware in the fridge till tomorrow.
