So, given the choice between:

Spouse visa and a skilled worker visa - which is best to go for? Spouse I assume as it’s not attached to a company?

I think Spouse is the more expensive route right? And a lot of paper work to prove relationship etc etc? Would an abridged marriage certificate be suitable?

You'll want an unabridged marriage certificate.
Spouse is more flexible in terms of working. It's expensive, yes. £1500-ish for the first 2.5 years and another grand for the next 2.5, plus NHI payments.
Not a lot of paperwork to be honest... Can't even remember what we used but it wasn't onerous at all.

It depends on your personal situation. I wouldn't say one is better than the other, both have pros and cons. The paperwork requirement is light for spousal visas.
 
Visa processing times are kinda long at the moment, been waiting 3 weeks for my SWV. Not good for my nerves :/

gov.uk is still showing processing times as 3 weeks, if it's gone past that you could probably query it.

I went through the paper work for tyhe spousal visa and it was far from light. You had to proof beyond a shadow of doubt that your marriage is legitimate and you are not married just to get into the UK. I think my application had about 100 pages of proof. No ways I was going to take a chance and get rejected.

In my case I think the fact we had been married 8 years already was enough :D

I gave a marriage certificate and a couple of utility bills with both our names on. That was enough, as is suggested by the visa website. You went overboard.

Spousal(Family) visa for us. Mostly because we aren’t young anymore and also not skilled.
Yes it was expensive but I would do it all over again.
Wrt the proof of relationship we used agents who gave us templates and guided us through the process. Just a formality to make sure it’s a real relationship and not some dodgy arrangement. So it’s not just the marriage cert but we had to substantiate with letters from friends to confirm as well as messages and photos etc.

Can’t say for sure. We had the original marriage cert(foreign) DHA never actually filed our registration and we couldn’t be bothered with the legal rubbish, so technically we are not married according to DHA.
Marriage is not as important as living together in a standing relationship. They cannot discriminate against unmarried couples.

Looks like you don't need one at all:

How to prove your relationship​

Send evidence that:

  • comes from the government, a bank, landlord, utility provider, or a medical professional
  • confirms your relationship with your partner - for example, that you live together, share expenses or are married or in a civil partnership
  • is less than 4 years old
You can use things like:

  • a marriage certificate or civil partnership certificate
  • a tenancy agreement, utility bills or council tax bills confirming that you live at the same address or pay bills together
  • a bank statement from a joint bank account, or confirming that you live at the same address
  • a letter from your doctor or dentist confirming that you live at the same address
If you do not have any evidence that meets this criteria, there is other evidence you can provide instead. However, it’s less likely that you’ll be given a visa in this case.

Other evidence you can provide includes:

  • a one-off bill like vet’s fees or home repair costs
  • letters confirming you and your partner are on the voting register for the same address
  • student finance paperwork confirming that you live at the same address
Things like greetings cards, travel tickets, receipts, photographs and text or social media messages are not considered strong evidence of your relationship and are unlikely to help your application.

Fortunately doesn’t apply to me. And I’ll say this in the context that only you’ll understand. Glad I ditched the “VW Club mattress”
