So just ordered one of these:
http://www.amazon.com/gp/product/B00F3F381A/ref=oh_details_o00_s00_i03?ie=UTF8&psc=1
R2650

Also got this wifi adaptor: http://www.amazon.com/gp/product/B00E7QGHE6/ref=oh_details_o01_s00_i00?ie=UTF8&psc=1
R270

Lastly 4GB of LDDR3 RAM: http://www.amazon.com/gp/product/B00CQ35GYE/ref=oh_details_o00_s00_i02?ie=UTF8&psc=1
R480

This is on its way here, can't wait :)

Bought them from Amazon and shipped here using Stackry (my first time bringing something in with Stackry but since Postbox-courier is out of action for now, have to make due).

Anyone else got a NUC and what has your experience been?

I got myself one. Running plex on it and have it hooked up to my tv. Apart from the hassle of a universal remote I had to get, the device is amazing. The performance for the power usage is insane.....

Got the entry level Celeron with Ubuntu and XBMC. It's pretty snappy. Definitely doesn't feel like I'm using a Celeron.

Anyone know what is happening with Postbox-Courier? What has your experience been with Stackry? I need to order some stuff from Amazon, and need to find a good alternative.

Do these things have SFDIF out ?

What is the minimum CPU power needed for streaming 1080P and decoding/encoding it?

I ask becuse I can't make my mind up as to what to but next. A NUC or a new mini-itx machine

I would go with Mini Itx. Can upgrade as needed. More choice regarding components.

The advantage of the Nuc is that it's extremely small. You can even mount it in the back of the screen.

True. Thou it's not future proof.

For example: Playing back 4k and higher Video. Youtube already has 8k.

I actually want to run music through a separate DAC :(

I understand, and for that I have a PSTV.

But for me, a true HTPC is one that can stream 1080P content and more while the HTPC being a download server with enough storage as well.

Don't forget that you can repair a Mini ITX yourself with regards to parts etc.
